Avocado Stuffed Breakfast Pockets

Lately I've had this thing for making breakfast pockets. I know it's a convenience to get those hot pockets at the store, but have you ever read the ingredient label?

I like the idea of making my own from scratch because I know what's really in them. Plus, combination fillings are endless vs. the limited selection hot pocket has, and mine can be frozen just as easily as theirs.

This morning I made breakfast pockets that contained:

Pepper Jack Cheese (the only processed ingredient I used for the filling)

No, I'm nowhere near perfect when it comes to what I put in my body, but in my opinion, this is certainly a great start!
